"Hopefully, imparting what's important to me, respect for the food and that information about the purveyors, people will realize that for a restaurant to be good, so many pieces have to come together." -- Thomas Keller

Finally, A Call

June 20, 2007

Finally got a call from SM. They were offering an affordable space, but there’s a catch. Yet another obscure location where everyone notices every stall but you. Not only that, they wanted us to revise our menu limiting us to a number of items, basically pasta and sandwiches, plus coffee and hot choco.

Drinks (L-R): Coffee Cafeteire, Isabel's Hot Choco

The thing is, they wouldn’t allow us to cook anything but a number of our items call for some form of cooking one way or the other. Besides, how many people in Lucena eat pasta and sandwich any given day? Think about the odds hmmm… Putting into consideration turn-over rate, number of customers, and food items one can count in his two hands, I guess we will pass… for now. Whose business doesn’t want to be in SM anyway?
